You want the fan to kick in if it gets to about 5-10 degrees higher than the thermostat temp, and to kick off when it gets about 5-10 degrees lower than the thermostat. I don't have any cooling issues and my car runs pretty consistently right at about 185 degrees in just about all weather conditions, but once my fan comes on it doesn't shut off until I park the car and turn off the ignition.
